This study aims to estimate disaggregated demand elasticities for nine dairy products in Santa Fe and Entre Ríos provinces. The methodology is derived from the application of an econometric LinQuad model which includes economic as well as demographic variables. The data comes from the National Households Expenditure Survey (ENGH). The results highlight differences for each dairy product’s price and expenditure elasticities. Comparison of our results is limited by the scarcity of similar studies for the region.
